Ingredients List

  • 2 pounds ground pork
  • 2 Tbls red wine vinegar
  • 2 tsp salt
  • 2 tsp ground black pepper
  • 2 1/2 tsp dried parsley
  • 2 tsp garlic powder
  • 2 tsp dried basil
  • 1 1/4 tsp paprika
  • 1 1/4 tsp crushed red pepper flakes
  • 1/2 tsp ground fennel seed
  • 2 Tbls brown sugar
  • 1/8 tsp dried oregano
  • 1/8 tsp dried thyme

    Directions

    1. Place all ingredients in a mixing bowl. I prefer a stand mixer. Mix slowly but thoroughly.
    2. Divide into third and form into logs. Wrape in plastic wrap. Store up to 12 hours in the refridgerator or store in vacuum seal bags in the freezer for longer periods.
