Sweet and Spicy Cucumber Salad
3 English cucumbers, halved lengthwise, and sliced
2 tsp kosher salt
1 C rice vinegar
1 C water
2 1/2 Tbls sugar
1/2 tsp crushed red pepper flakes
1/2 C diced red onion
- In a large colander, sprinkle cucumbers with salt. Alow the cucumbers to sit with the salt so that the juices drain.
- Simmer the remaining ingredients in a small saucepan over medium heat.
- Reduce the liquid to about 2/3 cup and remove from heat.
- Once cooled, pour over cucumbers and serve chilled
