Mornay Sauce

  • 2 Tbls butter
  • 2 Tbls flour
  • 1 1/4 C milk, warmed
  • 3/4 C shredded gruyere cheese
  • 1/4 C greated Parmesan cheese
  • salt and pepper to taste
  • 1/4 tsp nutmeg
  • Sandwich

  • 8 slices bakery white bread. I like a sour dough or even a light rye
  • 4 tsp Dijon mustard
  • 8 thin slices deli style ham
  • 4 large eggs
  • salt and pepper to taste

    Directions

      Mornay Sauce

    1. In a saucepan, melt butter over medium heat. Which in flour (make a rue) and cook for 2-3 minutes.
    2. Slowly mix in milk an dsimmer over low heat until thickened slightly. About 10 minutes. Stirring constantly.
    3. Remove from heat and stir in cheese. Season with salt, pepper, and nutmeg to taste.
    4. Sandwich

    5. Toast the bread slices. You may do this in a toaster or just use your oven's broiler to do them all at once.
    6. On two toasted slices of bread, spread a thin layer of Dijon mustard.
    7. Place two slices of ham on one piece of toast. Spoon two heaping tablespoons of Mornay Sauce over the ham.
    8. Top the ham/sauce with the other slice of bread, mustard side down.
    9. Top the entire sandwitch with two more tablespoons of Mornay Sauce. Repeat with the other three sandwiches.
    10. Put sandwiches under oven broiler until golden brown. This won't take long so don't go far.
    11. Cook four eggs sunny-side up in a non-stick skillet. Place cooked eggs on finsihed sandwiches. Sprinkle with a little salt and pepper.
