Tamale Pie

Ingredients List

  • 1 box JIFFY™ corn muffin mix
  • 1 egg
  • 1/2 cup sour cream
  • 1/2 cup creamed corn
  • 1 lbs ground beef
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1/2 tsp salt
  • 1 tsp cumin
  • 1 tsp chili pwder
  • 10 oz can red enchiladas sauce (divided)
  • cheddar cheese, shredded
  • Monterey jack cheese, shredded
  • cilantro leaves, chopped
  • Jalapeno peppers, chopped
  • Sour cream

    Directions

    1. Preheat oven to 400 degrees.
    2. Grease 8x8 inch casserole.
    3. Combine egg, sour cream, creamed corn, and Jiffy corn muffin mix and bake in casserole for 20 minutes. Set aside.
    4. Brown ground beef and onion. Add garlic. Drain beef and add salt, cumin, and chili powder.
    5. Poke holes in the corn bread. Pour 1/2 cup enchilada sauce over the cornbread. Spoon the meat mixture over the cornbread and top with lots of cheese. Bake another 20 minutes or until brown. Top with remaining ingredients and serve.
